Our aim is to enrich the beer culture rather than repeating what other brewers are already doing. We take a lot of inspiration from historical brewing documents and half-forgotten traditions but we also like to make way forward by forging together elements from different beer cultures as well as through pure experimentation.

  • An autumnal IPA inspired by the Scandinavian forests. Piney and floral British hops combine with spruce tips, toasted alder wood and juniper berries in a dry and bitter, jammy and somewhat spicy beer with unmistakable woodland character.

    Philomela combines two of our favourite brewing styles; the bold and complex flavours of British style beers and the eccentric fermentation practices inspired by European farmhouse brewing tradition. This is an export strength stout with flavours of dried fruit, chocolate, liqourice and charred hazelnut, joined by peculiar spicy notes and a very dry finish courtesy of a lengthy and warm fermentation by a Wallonian countryside yeast strain.

  • So you think you know your IPA? In this day and age the term is more than vague but for those interested in tasting what an India Pale Ale originally was like, this is probably as close as you will get.
    DitchWitch is brewed with only one type of malt and one type of hops to 19th century standards. British heritage Golden Promise barley malt lends a soft nutty maltiness and the Czech Saaz hop – in the past much sought after for the finest export IPAs – adds delicate but complex floral and spicy aromatics reminicent of fresh bitter herbs, lemon balm and citrus zest. A clean tasting beer with a crisp, bitter finish, it may be enjoyed young or after a few months of aging. DitchWitch is conditioned with live yeast that slowly keeps on working in the bottle and in the presence of abundant hop oils creating complex flavours over time.

    Our interpretation of a classic London-style double stout, Headroom places itself half-way between the drinkability of a porter and the heaviness of an imperial stout. Black and full-bodied with a distinct bitterness and massive mocha and chocolate flavours, it is matured over 90 days to fully develop its rich flavours before it goes into the bottle.

    At Butcher’s Tears we make a point of honour in defending the existence of classic beer types on the verge of extinction. Burton ales are strong dark beers with a long history in British brewing tradition but rarely seen today. Pantagruel is a rich and dark, yet elegant, bittersweet brew created in the style of a London-type Burton ale, ca 1950′s, while it was still a popular drink, especially in the winter season. This beer gets its character principally from a special mixture of dark brewing sugars that lend a luscious body and flavour notes of dried fruit, toffee, brazil nut and a touch of leather, and is topped off by a peppery marmalade hop note.

    Brewed once a year in the old tradition of March keeping beers, very strong beers meant for aging, this beer is intensely hopped during 3,5 hours of boiling in our direct-fired copper, fermented in open square to reach beyond 10% ABV and finally matured for a year before release. This Burton-style barley wine is a very characterful, rich and complex beer where the malty, hoppy and estery elements are elevated to the max. Best savoured on gloomy evenings by the candle light.

  • For this IPA we substituted a portion of malt for millet, an unusual brewing grain which adds a subtly curious element to this fruity, floral and spicy beer loaded with Belgian, English and Slovenian hops.

    Lipreader is brewed every year for the winter season. Loads of crystal malt and a dash of alder-smoked malt make the backbone around which the recipe changes every year. This year’s edition is brewed with the addition of molasses creating a distinct liquorice flavour to go along with the fruitiness and subtle woody smokiness that are the hallmarks of this beer.

  • A mellow, slightly fruity blond ale with the particular aromatic scent of bog myrtle, a plant that was frequently used in medieval times to flavour ale, as an alternative to hops.
    Brewed completely without hops, for this one we have used bog myrtle, handpicked in the Scandinavian forests, to lend both bitterness and aroma.
