Our aim is to enrich the beer culture rather than repeating what other brewers are already doing. We take a lot of inspiration from historical brewing documents and half-forgotten traditions but we also like to make way forward by forging together elements from different beer cultures as well as through pure experimentation.

    Burton ale… a bit of an obsession at Butcher’s Tears. An extinct beer style somewhere between India pale ale and Barley wine, made with extensive use of dark brewing sugars for complex fruit and liqourice flavours, topped with generous amounts of hops. This is an original recipe from Truman’s of Burton-on-Trent (the place of origin) from exactly a hundred years ago, appropriately brewed on Armistice day of 2018.

    Earthy hop notes of orange and rose petals along with a touch of sulphur give way to fruit flavours of pear, pineapple and fig with hints of toffee, hazelnut and treacle before ending in a firm bitterness. Full bodied yet not sweet. A beer with extra everything without becoming too heavy.

  • Lipreader is brewed once a year for the winter season to a continuously changing recipe. This year’s edition is inspired by Scandinavian farmhouse ales and is brewed with hand-picked juniper twigs and artisanal alder-smoked malt from Gotland, Sweden. The result is a beer with a complex smoke character upfront, complemented by notes of juniper needles, citrus, black cherries and hazelnuts.

    Philomela combines two of our favourite brewing styles; the bold and complex flavours of British style beers and the eccentric fermentation practices inspired by European farmhouse brewing tradition. This is an export strength stout with flavours of dried fruit, chocolate, liqourice and charred hazelnut, joined by peculiar spicy notes and a very dry finish courtesy of a lengthy and warm fermentation by a Wallonian countryside yeast strain.

  • So you think you know your IPA? In this day and age the term is more than vague but for those interested in tasting what an India Pale Ale originally was like, this is probably as close as you will get.
    DitchWitch is brewed with only one type of malt and one type of hops to 19th century standards. British heritage Golden Promise barley malt lends a soft nutty maltiness and the Czech Saaz hop – in the past much sought after for the finest export IPAs – adds delicate but complex floral and spicy aromatics reminicent of fresh bitter herbs, lemon balm and citrus zest. A clean tasting beer with a crisp, bitter finish, it may be enjoyed young or after a few months of aging. DitchWitch is conditioned with live yeast that slowly keeps on working in the bottle and in the presence of abundant hop oils creating complex flavours over time.

  • Contrary to common belief, stouts were not always necessarily black in colour and belonging to the family of porter. Grainiac has the bitterness and fullness you expect from a stout, but is pale orange in appearence. It’s brewed with six types of grain resulting in a luscious malty character with elements of oats, rye and spelt, along with an estery fruitiness.

    Our interpretation of a classic London-style double stout, Headroom places itself half-way between the drinkability of a porter and the heaviness of an imperial stout. This Burton-style barley wine is a very characterful, rich and complex beer where the malty, hoppy and estery elements are elevated to the max. Best savoured on gloomy evenings by the candle light.
