iv.   Aleography

Our aim is to enrich the beer culture rather than repeating what other brewers are already doing. We take a lot of inspiration from historical brewing documents and half-forgotten traditions but we also like to make way forward by forging together elements from different beer cultures as well as through pure experimentation.

TRIPLE CRIPPLE

An “extra tripel” as in triple hopped, triple fermented …and three times saved from disaster, this beer was a pain to brew but with die-hard endurance finally ended up as this mild and relatively restrained strong blond beer. Opening fruity and somewhat sweet but finishing crisp and dry, topped by a noble dryhop note, this beer was made especially with the conservative tripel drinkers frequenting our taproom in mind, but a limited amount ended up in bottles as well.

Triple Cripple tripel 8,2% 1,068 pale amber low pale barley malt Spalt Select, Saaz, Target dual top fermenting strain dark candi sugar
LIPREADER 2015

Lipreader is brewed every year for the winter season. Loads of crystal malt and a dash of Swedish alder-smoked malt make the backbone around which the recipe changes every year. The 2015 edition has taken the guise of an early 20th century-style Burton ale, a forgotten beer style that used to be a favourite winter seasonal in Britain. A rich, malty, full-bodied beer with a fruity and somewhat spicy character, with distinct hops and molasses notes along with that woody smokiness that is the hallmark of this beer.

PLACEHOLDER

This beer is the result of clearing out leftover ingredients claiming space in the brewery and throwing it all into the cauldron. It turned out we had 21 types of malt and 21 varieties of hops lying around, ending up in a complex yet restrained session beer in which citrussy and herbal hops consort with notes of toffee, biscuits, nuts and chocolate. Sort of a progressive special bitter, one could say…
